Standard formula: sheets = area ÷ sheet-area × (1 + waste). 4×12 is the most common commercial sheet (fewer butt joints on tall walls). 4×8 is the residential default. Waste-factor 10-15% is a reasonable starting point; bump higher on complex layouts with lots of openings.
